Heterocyclic Amines (HCAs) is what the Art of Grilling is NOT about! These carcinogenic compounds form when proteins, sugars, and creatine in meat react at high temperatures, but the upside is—we have some great good4u tips to help reduce their formation. We want you to showcase your skills at the grill in the most mouthwatering style while keeping your menu rooted in health! HEALTHY GRILLING Tips
Beer aficionados, this one’s for you! A 2015 study tested the effect of three types of beer— pilsner, non-alcoholic pilsner, and dark beer— used as marinades on the formation of HCAs in charcoal-grilled pork, compared to pork that has not been marinated. While all three beers resulted in a significant decrease in HCAs, the dark beer was most effective, resulting in 90% less HCAs forming compared to the non marinated pork. A previous study found similar results with beer and beef.
Use herbs and spices. There are numerous herbs, spices, and aromatics that have proven to inhibit the formation of HCAs, likely because of their antioxidant polyphenols— green and black teas, turmeric, rosemary, thyme, garlic, oregano, onion, basil, parsley, cumin, and coriander have all been shown to hinder the formation of HCAs. These all make wonderful additions to both marinades and dry rubs. In the case of ground meat, you can mix them directly into the meat.
Add vitamin E. A simple and highly effective way to reduce the formation of HCAs in your grilled meats is to add a little vitamin E directly to ground meat or apply it to the surface of larger cuts. It doesn’t take much either—all you need is one 400 IU capsule of natural vitamin E (dalpha tocopherol) to treat 10 pounds of hamburger. Researchers have also found that when there are higher levels of vitamin E in the meat to begin with it leads to lower HCA levels in the cooked meat. Grass-fed beef is naturally higher in vitamin E than its grainfed counterpart, four times higher in fact, and nearly twice as high as grain-fed.
The art of grilling demands finesse. Temperature, time, and even how often you wield the spatula matters. Healthier burgers aren’t flame-broiled or well done—they’re cooked at lower temps, flipped frequently, and served without charred black edges. Once temps begin to reach 400°F, HCA formation increases, and well-done meat has significantly more of them, so keep it low and juicy.

INSTRUCTIONS 1. Mix all ingredients for the recipe of your choice in a bowl. When adding sugar to a rub recipe, it’s important to break up clumps with a fork or even a few quick pulses in a food processor. 2.Dry rub doesn’t tenderize meat, so it’s okay to apply it any length of time before you cook; just choose a time that’s most convenient for you, whether it’s a day before, or an hour before you plan to cook. 3. When using the spice mix on meat, make sure the meat is fully defrosted and patted dry first to absorb excess moisture. Drizzle a light layer of olive oil evenly over the protein to help the rub adhere better (only use a small amount of oil, or the rub won’t stick). 4.Spoon an even layer of the dry rub on all sides of the food you are preparing to cook. You can use as much or as little dry rub as you want, but 1 tablespoon of rub for every pound of meat you’re cooking is usually sufficient. Make sure
to coat all the sides and nooks and crannies so the rub covers the entire surface. If you don’t plan on cooking right away, store the food in a closed container and refrigerate until ready to cook. Cooking instructions will vary depending on the protein or food used. 5.Store spice rubs in airtight containers—small mason jars are perfect, especially if you are planning to gift them. Go one step further and label the jar with the name of the spice rub!

One of the dangers of grilling food is the formation of heterocyclic amines (HCAs), carcinogenic compounds that form when meat is cooked at high temperatures—especially when cooked over a hot flame. But our grilled pork chops soak in a marinade that not only makes the chops extra juicy and flavorful, but also helps reduce the formation of HCAs (the secret is vitamin E)! This delicious recipe is perfect for Independence Day grilling. GRILLED RED, WHITE & BLUE Pork Chops Serves: 4 | Total Time: 50 Minutes

INSTRUCTIONS 1. Using a food processor or a blender, make the marinade. Add the garlic cloves, 3 tablespoons olive oil, vitamin E, coconut aminos, roughly chopped green onions, lemon zest and juice, and salt and pepper. Process or blend until smooth. 2. Place the pork chops in a Pyrex container and pour the marinade over the top. Move the chops around to coat well. Let marinate at room temperature for a minimum of 30 minutes to one hour (or marinate in the refrigerator overnight). Finely mince the reserved green onion top and set aside. 3. In a small bowl, make the dressing for the topping. Whisk together 3 tablespoons of olive oil, balsamic vinegar, salt, and pepper. Add the tomatoes and blueberries and toss to coat; set aside. 4. Heat the grill to medium heat (~400° F.). Lightly brush the grill grates with olive oil. Lift the pork chops out of the marinade and place on the hot grill. Grill for 7–9 minutes per side, or until the chops reach an internal temperature of 145° F. Remove from the grill, cover with foil, and let rest. 5. Place a vegetable grill basket on the grill. Use a slotted spoon to scoop the tomatoes and blueberries into the basket (do not add the dressing). Cook, stirring occasionally, for 2–4 minutes (until the tomatoes soften). Spoon the tomatoes and blueberries
back into the bowl with the dressing. Add the thinly sliced basil leaves and the minced green onion and toss to combine. Note: If you do not have a vegetable grill basket, use a cast iron skillet; just preheat the

INSTRUCTIONS 1. Preheat the grill to medium (~400° F). 2. Add the green chiles, onion, jalapeño,
breadcrumbs, and seasonings to a large mixing bowl and stir together until well combined. Add the ground turkey and use a light touch to mix all ingredients together until combined. For juicy burgers, do not overmix or compact the meat. 3. Lightly brush the grill with olive oil. Because the turkey mixture is moist, shape into patties as you place them on the grill: Place the bowl with turkey mixture and a towel next to the grill (for wiping your hands). Divide the mixture into four mounds and form into patties one at a time as you place each on the hot grill. Cook until browned on the bottom, 4–5 minutes, adjusting the heat if necessary. Carefully flip and cook for another 4–5 minutes on the second side. During the last few minutes of cooking, top the burgers with pepper jack cheese and let melt. If desired, toast the buns on the grill as well. 4. Enjoy with desired toppings.

INSTRUCTIONS 1. Place a medium skillet on the stovetop over medium heat. Once hot, melt 1 tablespoon butter and add the onion. Sauté for 8–10 minutes, stirring as needed, until the onion is soft and translucent. 2.While the onion cooks, use the remaining butter to spread on one side of each slice of bread. 3.After the onion has sautéed for 8–10 minutes, add the garlic and sauté, stirring frequently, for 2 minutes. Reduce the heat to low, add the balsamic vinegar carefully (to prevent a steam burn), stir to combine, and add the sauerkraut. Stir and let the sauerkraut warm through. Transfer to a bowl and set
aside. Wipe out the skillet and place back on the stovetop over medium heat. 4.Place two slices of bread, butter-side down, in the skillet and spoon half of the dressing on each slice, spreading it evenly using the back of the spoon. Place two slices of pastrami on each slice, spoon the onion-sauerkraut mixture evenly on top of the pastrami, and top each with a slice of cheese. Spread the remaining dressing on the inside of the other two slices of bread and place on top of the cheese. Allow the sandwich to toast for approximately 4 minutes, reducing the temperature slightly if needed. 5.Carefully flip the sandwich using a spatula. When flipping, use your hand on the top slice of bread, apply

INGREDIENTS 1 (16-ounce) container organic plain whole milk Greek yogurt 2 tablespoons Natural Grocers ® Brand Organic Grade A Dark Maple Syrup 1 teaspoon organic vanilla extract 1 ½ cups organic berries (blueberries, raspberries, and/or strawberries with stems removed and thinly sliced) ½ cup bite-size pieces organic fruit of your choice (melon, kiwi, pineapple, mango, peaches, plums, etc.) 3 tablespoons Natural Grocers Brand Bulk Organic Fine Shredded Coconut
INSTRUCTIONS 1. Line a rimmed baking sheet with parchment paper. 2. In a mixing bowl, combine the maple syrup and vanilla extract with the yogurt. Stir to combine. 3. Spread the yogurt mixture about ¼-inch thick, as evenly as possible, over the parchment paper in a rectangle shape. 4. Place the berries and fruit pieces strategically on top. 5. Sprinkle with shredded coconut and place in the freezer for approximately 3 hours, or until the yogurt is frozen. Cut or break into approximately 16–20 pieces and serve. 6. Store leftover bark in the freezer in a sealed stasher bag or container with an airtight lid. Will last up to 3 months in the freezer.

INGREDIENTS 1 ½ cups cherry juice ½ cup organic lemon juice (from 3-4 medium organic lemons) ¼ cup green tea simple syrup, see recipe below 2 cups sparkling water 4 slices organic lemon, optional for garnish
INSTRUCTIONS 1. Mix the cherry juice, lemon juice, and simple syrup until combined. Add the sparkling water and gently stir. Serve immediately over ice, if desired. Garnish with lemon slices.
GREEN TEA SIMPLE SYRUP Makes: 1 ½ cups | Prep time: 15 minutes
INGREDIENTS 1 cup water 5 green tea bags 1 cup Natural Grocers ® Brand Raw and Unfiltered Clover Honey INSTRUCTIONS 1. Heat the water and green tea until simmering in a small saucepan, and continue to simmer gently for 5 minutes. Remove from the heat and steep for 5 to 10 more minutes. Squeeze tea bags out and discard them. Add the honey and mix well. Store the syrup in a glass container with a tight-fitting lid in the refrigerator until ready to use.

MANGO TANGO Punch With a little bit of sweet and a little bit of tart, this Mango Tango Punch is a thirst-quenching beverage that’s perfect for hot summer days! Serves: 4 (6-ounce) servings | Total Time: 5 minutes
INGREDIENTS 1 cup Santa Cruz Organic ® Orange Mango Juice 1 ½ cups Coconut Water ½ cup cold water ½ cup Santa Cruz Organic Pure Lime Juice Fresh organic orange or blood orange, fresh organic mint, and/or organic lime wedge, for garnish, optional
INSTRUCTIONS 1. Mix together orange mango juice, coconut water, water, and lime juice in a large pitcher. 2.To serve, fill four glasses about ¾ full of ice and evenly distribute juice in each glass. Garnish with fresh orange or blood orange, fresh mint, and a lime wedge. Enjoy!
