Whipped Raspberry Clouds

A light and creamy finish to Valentine’s dinner, this quick and easy dessert is fancy without being fussy. Raspberries and cocoa are folded into flu y whipped cream to create clouds of flu that are sweet with a bit of tartness. Make it ahead of time and refrigerate until ready to serve.

Ingredients

Serves: 4 | Prep time: 10 minutes Setting time: 4–8 hours | Total time: 1 hour, 10 minutes

1 cup organic heavy whipping cream ½ teaspoon organic vanilla extract

Instructions

2 cups Natural Grocers ® Brand Organic Frozen Raspberries 1–2 tablespoons Natural Grocers Brand Organic Grade A Dark Maple Syrup (1 tablespoon produces a tarter flavor) 1 tablespoon Natural Grocers Brand Bulk Organic Cocoa Powder Optional toppings: Natural Grocers Brand Organic Frozen Raspberries, Natural Grocers Brand Bulk Organic Chocolate Chips, Natural Grocers Brand Bulk Organic Cocoa Powder , or shaved chocolate Note: For dairy-free version, replace the whipped cream, vanilla, and maple syrup with 2 cups of coconut whipped topping and simply stir in the raspberries and cocoa.

1. Whip the cream and vanilla to soft peaks (5 minutes) and set aside. 2. Blend the frozen raspberries and maple syrup in a food processor for 10-15 seconds to create a coarse-sand consistency. 3. Gently fold the blended raspberries and cocoa powder into the whipped cream. 4. Distribute the dessert among four small, clear glasses or dessert cups and refrigerate for an hour for the best texture. Refrigerate any leftovers for up to 3 days in an airtight container.
