In the South, black-eyed peas and collard greens are traditionally eaten on New Year's Day to bring prosperity and luck in the new year. We can’t promise our Spicy Collards and Black-Eyed Pea Soup will bring you great fortunes, but we can promise that it will deliver on flavor! Black-Eyed Pea And Soup SERVES: 6 PREP TIME: 20 MINUTES

Ingredients

COOKING TIME: 50 MINUTES TOTAL TIME: 1 HOUR 5 MINUTES

• 2 tablespoons Natural Grocers ® Brand Organic Extra Virgin Olive Oil • 1 medium organic onion, diced • 2 medium stalks organic celery, diced • 1 medium organic carrot, diced • 3 medium organic garlic cloves, minced • 1 organic jalapeño, seeded and diced • 2 (15-ounce) cans organic black-eyed peas, drained and rinsed • Natural Grocers Brand Bulk Organic seasonings: 2 ½ teaspoons Real Salt ½ teaspoon Black Pepper • 4 cups organic vegetable stock • 1 (14.5-ounce) can Natural Grocers Brand Organic Fire-Roasted Diced Tomatoes • 3 tablespoons Natural Grocers Brand Organic Tomato Paste • 1 bunch organic collard greens, stems removed, and greens chopped (organic kale or chard are suitable alternative greens) • 2 cups additional vegetable broth or water as needed • Hot sauce, for serving Optional garnishes: fresh organic herbs, such as minced oregano, thyme, or parsley 1 ½ teaspoons Thyme, divided 1 teaspoon Oregano, divided ½ teaspoon Ground Smoked Paprika 2 teaspoons Taco Seasoning

Instructions

1. On the stovetop over medium-high heat, place a large soup pan or Dutch oven. Once hot, add the olive oil, coat the pan and then add the onion, celery, and carrot. Sauté for 6–8 minutes, until the onion is translucent, stir frequently and adjust heat as necessary to avoid browning the onion. Add the garlic and jalapeño and cook, stirring, for 1–2 minutes, until the garlic is fragrant. 2. Add the black-eyed peas, broth, seasonings, and all remaining ingredients, stir until well combined. Reduce the heat, cover and simmer on low for 45 minutes to allow flavors to develop. If the soup is too thick, add up to two additional cups vegetable broth or water until it's the consistency of soup. 3. Once done, serve immediately with hot sauce and crusty bread, corn bread, or rice if desired.
