Summer Squash Sauté We’re entering peak summer squash season! Make use of all of that squash in this super easy, super tasty Summer Squash Sauté. Two types of summer squash—yellow crookneck and zucchini—are combined with cherry tomatoes, garlic, and Parmesan cheese to make a perfect side dish for any summer meal.

Serves: 4 Prep time: 6 minutes | Cook time: 7 minutes Total time: 13 minutes

Ingredients • 1 ½ tablespoons Natural Grocers Brand ® Organic Extra Virgin Olive Oil • 1 medium organic yellow squash (~ ½ pound), chopped • 1 medium organic zucchini (~ ½ pound), chopped • 2 organic garlic cloves, chopped

• 1 cup organic grape or cherry tomatoes, each sliced in half • 1 teaspoon Natural Grocers Brand Bulk Organic Oregano • Natural Grocers Brand Bulk Real Salt and Organic Ground Black Pepper, to taste • 3 tablespoons Natural Grocers Brand Organic Grated Parmesan Cheese • Natural Grocers Brand Organic Balsamic Vinegar, optional for serving • Fresh organic oregano, finely chopped, optional for serving Instructions 1. Add the olive oil to a large skillet over medium-high heat. Once hot, add the yellow squash and zucchini and cook for 3-5 minutes, stirring occasionally. 2. Add the garlic and the tomatoes and cook for 2-3 minutes more, gently stirring, or until the vegetables are crisp-tender (or cooked to your preference) and the tomatoes have softened just a bit. 3. Add the oregano and season with salt and pepper. Gently stir to combine and sprinkle with Parmesan cheese. If you like, drizzle with 1-2 tablespoons of balsamic vinegar and sprinkle with fresh oregano just before serving. Serve immediately.
