Ingredients Potato soup can get pretty fancy these days, but we’re revisiting its roots, which lie in simple pantry ingredients. This soup comes together quickly in just one pot on the stovetop, creating a cozy bowl perfect for snuggling up with on a cool night. And if you want to “fancify” it a little, we’ve also o ered suggestions for plenty of delicious toppings. Irish Potato Soup • 3 tablespoons organic Irish butter 1. saucepan over medium heat, then add the chopped onion and cook until translucent, 7-8 minutes. 2. Add the potatoes, broth, bay leaf, thyme, salt, and pepper and increase the heat to high to bring to a boil, then reduce to a simmer. Cook until the potatoes are cooked through, approximately 20 minutes. 3. Remove the bay leaf and stir in the milk, cooking for two minutes. Taste and adjust seasonings as needed. 4. Use a potato masher to mash some of the potatoes. For a smoother consistency, use an immersion blender and blend the soup until smooth. Alternatively, place the soup in a blender, only filling the blender halfway. Remove the center cap of the lid and cover with a kitchen towel before blending; you may need to do this in batches. 5. Top with optional toppings and serve immediately.
