It’s a small seal, much smaller than the value it carries and the story it tells. Because, once upon a time, organic farming was the way before industrialized agriculture ruled the day. Food wasn’t made to last for endless amounts of time, preserved with a cocktail of chemicals that compel more questions than answers. And no one had ever heard of GMOs. Once upon a time, milk, butter, and eggs came from happy hens and cows that roamed the range and fed on pasture grasses. Small family farms were what the phrase suggests, not dark, overcrowded barns and cages where a blade of grass or a ray of sunshine are hardly ever seen. And then… once upon a more recent time, those who were paying attention joined together to stand against the bulldozer of modern food production, whose wheels were turning the soil to dust. Organics are about transparency, about knowing exactly what goes into (and what doesn’t go into) the production of the foods we eat. In recent months, concern has been growing about the lack of transparency of a post-harvest fungicide coating by Apeel Sciences that has been approved for use on organic produce, though the full ingredient list has not been made public.

Editor’s note: We reached out to Apeel multiple times requesting a full list of ingredients, but never received a clear answer about what is in Organipeel.

Apeel claims their post-harvest sprays extend produce shelf-life. One of their products, Organipeel TM is listed by the Organic Material Review Institute (OMRI) for use “as a fungicide for post-harvest use in organic production or food processing and handling” according to a United States Department of Agriculture (USDA) spokesperson. Apeel products are being used on both conventional (as Edipeel TM ) and organic produce (as Organipeel) including avocados, citrus fruits, apples, and cucumbers. In terms of ingredients, Apeel states that their products are “made of purified mono- and diglycerides that have been derived from plant oils” and adds “Apeel for organic produce contains citric acid.” According to Organipeel’s EPA pesticide product label, citric acid makes up 0.66 percent of the ingredients—the other 99.34 percent of ingredients remain a mystery. But the ingredients for products used on organic produce should never be a secret. Though the mystery remains, this is what we know Though it remains unclear whether the ingredients listed in Apeel’s Edipeel are also in Organipeel, if indeed they are the same, we have reason to be concerned. Mono- and diglycerides are produced in a way that can result in human-made trans fats being present in the finished product. In 2015 the Food and Drug Administration (FDA) recognized the hazard that human-made trans fats pose to health and banned the use of human-made trans fats, or partially hydrogenated oils in the food supply. However, because mono- and diglycerides are regulated as emulsifiers rather than fats, they are allowed for use in/on food

To process grapeseed oil into mono- and diglycerides, Apeel products go through an industrial process that inevitably leaves traces of processing agents and heavy metals. In their request

to the FDA for recognition as a Generally Recognized as Safe (GRAS) product, Apeel states that they use ethyl acetate and heptane as solvents. They also list traces of heavy metals including palladium, arsenic, lead, cadmium, and mercury. Though trace amounts may not sound like much, is any amount of heavy metals added to fruits and veggies okay? And what about those fruit and veggie lovers who eat more than the projected average amount per day? In the application for GRAS, Apeel cites several studies on the general safety of grapeseed oil derived mono- and diglycerides, but there are no studies on the e ects of Apeel products themselves on human or environmental health. According to Apeel, in terms of washing their products o fruits and veggies they state, “it’s unlikely that you’d be able to remove all of it,” and add “it wouldn’t maintain the fruit’s natural freshness if it was easily removed.” Yikes! Our conclusion Produce sprayed with this mysterious coating leaves us with exposure to the ingredients themselves (which still haven’t been made clear) and to the by-products of their processing. Fruits and vegetables are nutritional gems best kept organic. Apeel and Organipeel do not meet our high standards, therefore, you will never find produce coated with it at any of our stores.

It is also important to note that mono- and diglycerides are only allowed in organics for drum drying (a method used to dry out liquids from raw materials), not as a consumable or coating.

• 1 small or ½ large crisp-sweet organic apple (Honeycrisp, Pink Lady, and Ambrosia work well), diced or thinly sliced into half-moons with a mandoline slicer Maple Coconut Butter Glaze • 4 tablespoons raw coconut butter (whole coconut purée) • 2 tablespoons organic salted butter • 3 tablespoons Natural Grocers Brand Organic Dark Grade A Maple Syrup • ½ teaspoon Natural Grocers Brand Bulk Organic Cinnamon • 1⁄8 teaspoon Natural Grocers Brand Bulk Real Salt Optional for topping: Natural Grocers Brand Bulk Sliced Almonds or Organic Pecan Pieces

Instructions 1. Remove the lid from the jar of coconut butter (for the glaze) and place in a saucepan with hot water; the water should come about ¾ of the way up the jar. Place over medium heat until softened, 5-7 minutes. Remove from heat and set aside. 2. Preheat the oven to 350° F. Line an 8x8-inch baking dish with parchment paper, leaving about one-inch overhang on two sides. Alternatively, use a 9-inch well-greased cake pan. 3. Add one stick of butter to a skillet over medium heat; allow to melt, bubble, and begin to brown, about 3-5 minutes, until it smells toasted and nutty. Stir often. Remove from heat and stir in the apple sauce and coconut sugar. Let cool for 5 minutes. 4. Whisk the eggs and vanilla together in a large mixing bowl. Add the almond flour, baking powder, 1 teaspoon cinnamon, the nutmeg, and salt. Stir to combine. Add the brown butter-apple sauce mixture and stir until incorporated. Evenly spread the batter into the prepared baking dish, ensuring the batter comes to the edges of the dish. 5. Toss the apples with ½ teaspoon of cinnamon in a bowl and then evenly scatter the apple pieces over the batter; if using half-moon slices, arrange over the top. Transfer to the oven and bake for 40 minutes, until the edges are brown and the center is just set. Let cool for 5 minutes, then lift the parchment paper out of the baking dish and set the cake on a rack to cool for an additional 10 minutes before glazing. If using a cake pan, cool for a minimum of 30 minutes. 6. To make the glaze add 2 tablespoons of butter to a small pot set over medium heat. Let the butter melt, bubble, and brown, 2-3 minutes total. Add the coconut butter, maple syrup, cinnamon, and salt and stir until combined. Transfer to a small bowl and refrigerate for 15 minutes while the cake bakes. Remove from the refrigerator and stir well. Set aside (unrefrigerated) until ready to use, stirring periodically to prevent it from setting. 7. Once the cake has cooled completely, use a spoon to drizzle the glaze over the top. Refrigerate for approximately 2 hours (or until the glaze is set) before cutting. Store leftovers in the refrigerator.

NUT ITION BYTES By Geoff Brokx and Shelby Miller Study Shows Pycnogenol ® as Effective as Prescription Med for ADHD, Without the Side Effects According to the CDC, approximately one in 10 children between

6 and 12 are diagnosed with attention deficit hyperactivity disorder (ADHD). ADHD makes it challenging for children to stay focused, and stimulant drugs such as methylphenidate hydrochloride (MPH) are often prescribed as the first line of treatment. These stimulant drugs have numerous side effects, leading researchers to explore other alternatives to help children cope with ADHD. A recent study compared the effectiveness of Pycnogenol, a patented extract of French maritime bark, to the stimulant drug MPH. Pycnogenol was chosen due to its well-known anti inflammatory and antioxidant effects, which may play a role in the pathophysiology of ADHD. The study included 88 children, between 6 and 12 years old, who had received an ADHD diagnosis. The children were randomized to take either MPH or Pycnogenol (20-40 mg), with the dose adjusted by weight, for 10 weeks. During the 10-week period, the children’s parents and teachers were asked to fill out several questionnaires to assess behavioral, emotional, and physical changes at baseline, five weeks, and 10 weeks during the study. Both parents and teachers were blinded to the type of treatment the children received. A 2020 study revealed that supplementing with spirulina for two months improved allergic rhinitis symptoms as well as quality of life better than the pharmaceutical drug, cetirizine. Spirulina is a type of seaweed that’s also a valuable nutritional supplement that contains remarkably high levels of essential fatty acids, essential amino acids, vitamins, and minerals. In addition to providing an abundance of nutrition, it can also offer a helping hand to balance the immune system’s reaction to allergens. In the study, subjects either received a daily dose of 2 grams of spirulina or 10 milligrams of cetirizine for two months. Before the treatment was initiated, there was no difference in symptoms between the two groups. At five weeks into the study, the children taking MPH saw significant improvements for total ADHD and inattention scores. At 10 weeks, children taking either MPH or Pycnogenol saw significant improvements in overall ADHD rating scale, decreases in hyperactivity/impulsivity, and a decrease in inattention. While the researchers noted Pycnogenol acted slower than MPH, both were equally matched for inattention at 10 weeks. Additionally, five times as many adverse e ects were reported with MPH. The researchers concluded that Pycnogenol may be a good alternative for people who desire minimal side effects and are willing to wait a few more weeks for the treatment to work.

greater in the spirulina group compared to the cetirizine group, including the prevalence of rhinorrhea (runny nose), nasal congestion or obstruction, and loss of smell. Sleep conditions, working life, and social activity also improved. The researchers then went on to measure inflammatory markers and found that levels were significantly lower in the spirulina group compared to the cetirizine group. The authors noted that relief of allergy symptoms may be due to the anti inflammatory effects of spirulina. As seasonal allergy suffering is on the rise, including fall allergies, spirulina could be a promising solution that also offers a nutrition-packed punch.

OU Egg Standards Cage free & free range probably don’t mean what you think they mean... except at Natural Grocers ® Our Minimum Standards Include: • Continuous access to the outdoors means hens must go outside, during both the aying cycle and when hens are not aying. • Unfortunately, the abels on eggs you see in most grocery stores do not necessarily mean what you think they mean. Per the USDA definition, cage free only means the hens are not in cages during the aying cycle. The hens do not go outside and can even be caged when not producing eggs. Additionally, the cage-free abel doesn’t cover ecologically thoughtful practices or humane standards of care, such as air quality, natural lighting, an environment that promotes natural behaviors and protects the hens, and space requirements per hen in the barn.

Have to Do with What Does Blood Sugar IMMUNITY? By Lindsay Wilson

This time of year is a marker of sorts: The cooler fall months usher in a holiday season full of sweet temptations and loads of comfort foods, coupled with the start of cold and flu season. But what does the season of sweets and treats have to do with the cold and flu season, or more specifically, how you weather cold and flu season? It all has to do with blood sugar. When most people think of blood sugar dysfunction, they think of type-2 diabetes, but that is just the end result of many years of chronically elevated blood sugar. There’s a spectrum of blood sugar dysfunction, and the damage to your body starts even when your blood sugar consistently stays at the high end of “normal.” Simply put, blood sugar levels even at the high end of normal are bad for your health. Good Health & Immunity Start with Balanced Blood Sugar Keeping blood sugar, or glucose, balanced is so important to health that our bodies have a tightly regulated system to ensure levels stay within a narrow range. When you eat sugary foods and simple carbohydrates (like bread, pasta, or french fries), they are rapidly digested and converted into glucose, leading to sharp spikes in blood sugar. The pancreas responds by releasing a surge of insulin, which directs the glucose into cells and lowers blood sugar levels back to a normal range. When sugar and/or refined carbs are occasionally consumed in small amounts, this is an effective system. But when these types of foods are regularly consumed, the body is constantly fighting to keep blood sugar levels in a normal range by continually pumping more insulin into the bloodstream. Overtime, the cells stop responding to insulin (i.e., insulin resistance), the first step toward developing type-2 diabetes. This leads to chronically elevated blood sugar and insulin levels, which damages proteins in the body and leads to major inflammation and oxidative damage, underlying factors in almost all chronic diseases. In fact, chronically elevated blood sugar increases the risk for type-2 diabetes, Alzheimer’s, depression, cardiovascular disease, and even some types of cancer. It also leads to a poorly functioning immune system.

Keeping your blood sugar levels in a healthy range determines how well your immune system is able to mount an attack against all types of pathogens, whether viral or bacterial. Chronically high blood sugar causes major dysfunction in both innate and adaptive immunity, and research has found that some viruses and bacteria are “better nourished and become more virulent” in the presence of high blood sugar, which provides them with a better environment to cause infection in the first place (for example, we saw with COVID-19 that people with type-2 diabetes experienced an increased risk for severe illness or even death). Even if you are an overall healthy person, if you eat sugar when you are sick, or are first starting to feel sick, that sugar will undermine your immune response, in part because glucose blocks vitamin C from entering your cells, and vitamin C is a critical immune-supportive nutrient, especially during acute infection. When you maintain healthy blood sugar levels, you also support the optimal functioning of your immune system.

How to Achieve Healthy Blood Sugar Balance... You Are What You Eat

The good news is that you are in charge of your own blood sugar! Blood sugar is di rectly related to what you eat, so by shifting away from a diet built on a foundation of grains, starchy fried foods like potato chips and french fries, sugary sodas and coffee drinks, and baked goods and sweets, to a lower carb diet built around an abundance of low-starch vegetables, healthy fats, and protein, you can get your blood sugar under control, and keep it that way. Most of us eat an excessive amount of carbohydrates— more than our bodies need, or can handle, which causes dramatic spikes in glucose and insulin. To maintain healthy blood sugar aim to get between 100 and 150 grams of carbs each day (the average American eats between 350 and 600 grams of carbs each day, mostly in the form of refined, processed sugars and grains). If you work to get the majority of your carbs from non-starchy vegetables and a small amount of higher-carb foods like beets, potatoes, and carrots, you will easily fall into this range. Add healthy fats and quality protein, and you’re on your way to healthy blood sugar balance. When you approach eating in a way that maintains healthy blood sugar balance, then an occa sional indulgence—sweet treats included—shouldn’t be a problem. 20 | Health Hotline ®

Supplements for Blood Sugar and Immune Support While diet is vital for maintaining healthy blood sugar balance, there are also some key sup plements that will give you extra support. The advantage of these supplements is that many of them are foundational nutrients that, in addition to maintaining healthy blood sugar balance, will promote overall health and immune competence, as well as reduce inflammation and oxidative damage in the body. B-complex vitamins. This family of vitamins is intricately tied to cellular energy production via their role in metabolizing carbohydrates and complex sugars. When you eat an excess of grain based carbs your body quickly burns through the B vitamins to keep up, which can drastically deplete levels. When these important cofactors are missing, blood sugar imbalances can occur. A B-complex vitamin is a foundational supplement that also supports general health, overall immune competence, and mental wellbeing. Magnesium. This important mineral plays a key role in regulating insulin activity and cellular glucose uptake, and supplementation with the mineral has been shown to improve fasting and post-prandial glucose levels and insulin sensitivity, as well as decrease markers of inflammation in those with prediabetes. Magnesium also supports white blood cells’ ability to seek out and destroy pathogens and low magnesium levels can lead to a cytokine storm, a severe immune reaction in which the body releases a cascade of inflammatory cytokines too quickly. It is estimated that at least half of all Americans don’t get enough magnesium through diet, making supplementation necessary. Chromium. This mineral is essential for normal carbohydrate metabolism and research has found that supplemental chromium has significant beneficial effects on HbA1c (a marker of long-term blood sugar levels) and glucose and insulin levels. Chromium also plays a role in modulating the immune response, that is, it ensures that the immune system neither under- nor over-reacts to pathogens. Zinc. Another important mineral for blood sugar balance, zinc plays a role in insulin signaling, helping to regulate blood glucose levels. One trial showed that zinc supplementation lowered blood glucose and cholesterol levels in prediabetics, as well as reduced the number of people who progressed to full-blown diabetes. A meta-analysis of 32 studies, involving 1,700 participants, concluded that zinc supplementation can improve blood glucose control in both prediabetic and diabetic patients. Zinc is also a critical mineral for both innate and adaptive immune system function and even moderate deficiencies can increase the risk of viral infection.

Alpha-lipoic acid. One of this antioxidant’s important roles in the body is to support insulin function and research has shown that supplementation significantly decreases fasting glu cose, insulin, insulin resistance, and HbA1c in diabetics in a dose-dependent manner, that is, higher doses led to more significant decreases (daily doses ranged from 300 to 1,200 mg). It’s also been found to reduce triglyceride and LDL cholesterol levels, and through its power ful antioxidant actions, reduce oxidative damage caused by chronically high blood sugar. Berberine. Research has shown that the plant extract berberine lowers fasting glucose and insulin levels, post-prandial glucose (glucose levels after eating), HbA1c, and triglycerides. It improves insulin resistance, inhibits glucose production in the liver, and stimulates the breakdown of glucose. Berberine also has anti-inflammatory, antioxidant, and antimicrobial properties and supports mitochondrial health, another key component for overall health. One of the most important things you can do for both your short-term and long-term health is to get your blood sugar under control. It is absolutely vital for your body to be rooted in health and to remain resilient against infection. And it’s in your power to do it—aim to eat a low-carb diet most of the time so you can enjoy those moments of indulgence, and incorpo rate some key supplements that will give you the extra support you need over the long term. Do this and you’ll increase your chances of staying healthy and vibrant, not just through the fall and winter months, but for years to come.
