Think making your own dressing is hard, or time consuming? Think again! These simple dressing recipes are quick and easy and are built on a base of organic extra virgin olive oil, which is heart healthy, loaded with free-radical scavengers, and is a welcome reprieve from the processed oils found in many store bought dressings. These dressings are great for sa ads, but they can also be used to reinvigorate steamed vegetables, baked or grilled fish or chicken, grains, beans, and as a marinade for chicken, fish, veggies, tofu, or tempeh. Each recipe makes about ½ cup, but since they keep well in the refrigerator, you may want to double or even triple the recipes to always have a healthy, good4u SM dressing on hand. ORGANIC LEMONY HERB DRESSING 6 tablespoons Natural Grocers ® Brand Organic Extra Virgin Olive Oil Juice from one organic lemon , about 3 tablespoons 1 tablespoon finely minced organic shallot , from one small shallot cup packed organic basil leaves cup packed organic parsley leaves (or substitute ci antro) teaspoon Natural Grocers Brand Bulk Real Salt, to taste INSTRUCTIONS 1. Combine all ingredients in a blender and process until nearly smooth. Store in an airtight container.

ORGANIC WHITE WINE DIJON DRESSING 4 tablespoons Natural Grocers Brand Organic Extra Virgin Olive Oil 4 tablespoons organic white wine vinegar 4 teaspoons Natural Grocers Brand Organic Dijon Mustard ½ teaspoon Natural Grocers Brand Bulk Real Salt 1 teaspoon Natural Grocers Brand Bulk Organic Thyme Leaf ½ teaspoon Natural Grocers Brand Organic Grade A Dark Maple Syrup INSTRUCTIONS 1. Combine all ingredients in a small bowl or a jar with a tight-fitting lid. Whisk or shake vigorously. Taste and adjust seasoning as desired. Whisk or shake until fully emulsified.

BASIC ORGANIC VINAIGRETTE 4-6 tablespoons Natural Grocers Brand Organic Extra Virgin Olive Oil 3 tablespoons Natural Grocers Brand Organic Apple Cider Vinegar, or vinegar of your choice 1 organic garlic clove, smashed and finely minced teaspoon each Natural Grocers Brand Bulk Real Salt and Organic Ground B ack Pepper INSTRUCTIONS 1. Combine 4 tablespoons of olive oil and all the other ingredients in a small bowl or a jar with a tight-fitting lid. Whisk or shake vigorously. Taste, add more olive oil if desired, and adjust seasoning to taste. Whisk or shake until fully emulsified.
